He Who Tends The Fig Tree Will Eat Its Fruit

Figs are mentioned throughout the Bible and are recorded since about 27038 B.C. in the Tablets of Lagash. They are out of season right now, but it is the perfect time to use dried figs. Here is a fast, easy and healthy snack which is easy to eat on the run or pack for lunch.

Rolled Figs
1 Cup dried figs
1/2 Cup raisins
1/2 Cup finely chopped coconut
3/4 Cup of your favorite nuts
A dash of nutmeg and/or cinnamon to taste
1 or 2 squeezes of lemon juice

Cut off any stems from the figs. Roughly chop the figs and reserving about half of the coconuts, put all other ingredients in a food processor. Process until you get a rough paste, not too fine. Roll into small balls, adding a bit of lemon juice if necessary, and roll the balls in the reserved coconuts.
