Vintage Pineapple Cookies Recipe

It's time to celebrate mothers on Sunday. Do you have a favorite recipe from your mom or grandmother? Or maybe you have a special recipe your mom or mother-in-love would enjoy. You're invited to link up your vintage recipes below.

My own mom absolutely loves pineapple and pretty much any dessert or sweet with pineapples, so I'm thinking of her as I share this recipe for pineapple cookies.  Wishing all mothers a very Happy Mother's Day this weekend.

Pineapple Cookies Recipe
1/2 cup shortening
1/2 cup brown sugar

1/2 cup white sugar
1/2 cup drained crushed pineapple
1/2 cup broken nuts
1 egg, well beaten
1/4 teaspoon salt
1/4 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon vanilla extract
2 cups flour

Cream shortening with sugars.  Add egg and pineapple.  Mix thoroughly.  Add egg and pineapple.  Mix thoroughly.  Add extract.  Sift flour, measure, and sift with salt, baking soda, and baking powder.  Add to first mixture.  Add nuts.  Mix thoroughly.  Drop by teaspoonfuls on to a n oiled cookie sheet.  Bake in moderate oven (425 F.) about 10 minutes.  Mrs. T.
