Strawberry Mousse Recipe

This is an easy recipe, and the gelatin ensures that the mousse won't liquify, so it's fairly foolproof too.  It's delicious on its own, or you can use it as a filling for a cake, cream puffs, or other pastry.

You can also let this mousse set in a heart-shaped dish or rose-shaped mold.  It would be just lovely for Mother's Day.  Remember this recipe for Valentine's Day too, just use frozen strawberries since they will be out of season in February.

Strawberry Mousse Recipe
1 lbs. strawberries, cleaned, hulled
2 cups whipping cream
1/2 cup powdered sugar
1 packet unflavored gelatin

Soften gelatin according to directions on packet.  Process strawberries in food processor until smooth.  Add to gelatin and stir well.  Let cool in refrigerator while you prepare the whipped cream.

In large bowl, whip cream with powdered sugar until stiff peaks form.  Fold in cooled strawberry mixture.  Transfer to a serving bowl or individual dishes.  Refrigerate for at least two hours or until set.  Garnish with a strawberries, edible flowers, whipped cream, chocolate curls, or let your imagination run wild.
